acidity
Acids contribute to a wine’s tart or sour flavour. Most acids in wines come from the grapes in the form of tartaric, malic and citric acid and effect how the wine tastes
Animal Products used in winery
Animal Products such as Isinglass and egg whites are used in the wine making process from this winery.
anthocyanin
The scientific name for the group of pigmented substances extracted from black grape skins that give red wine its colour.
appellation
A legally defined area used to identify where wine grapes are grown.
astringent
A tactile response in the mouth, typically to tannins, making the mouth feel dry. High tannin wines have a high astringency,
Balthazar
A 12 litre bottle or 16 standard bottles. Most wine bottle sizes are named after biblical kings and this one is not always agreed, but is most likely from the book of Daniel, where Belshazzar held a feast and drank wine while his city was under siege.
Bio-Dynamic winery
Bio-dynamic viticulture is a philosophy combining the maintenance of sustainable soil fertility and the recognition of the link between plant growth and the rhythms of the cosmos.
carbonic maceration
A method where uncrushed grapes are placed in a sealed vat and topped with carbon dioxide, creating wine without oxygen. The resulting wines have low tannin and colour.
Cellar Door appointment only
Some cellar doors are not permanently manned so require you to call ahead to make a booking. Many operate weekends on a routine schedule and appointment only at other times
DVAs
Designated Viticultural Areas. A term used to define official Canadian Wine Regions

Electric Vehicle charging station on site at Vineyard. Predominantly Tesla charging but check with vineyard
Free from Animal Products ALL Wines
Animal Products such as Isinglass and egg whites are not used in the wine making process from this winery. Historical vintages may have used animal products so best to check with the Winery
Free from Animal Products SOME Wines
Animal products such as Isonglass and egg whites are sued in processing some of the wines from this winery. They do however have some Vegan wines so best to check with the winery.
GI (Geographic Indication)
GI (Geographic Indication) is the term for the officially recognised super zones, zones, regions and sub-regions of Australia which have been entered in the Register of Protected Names in accordance with to the Australian Wine and Brandy Corporation Act 1980 (Cth).
grape must
From the Latin term vinum mustum, meaning ‘young wine’. This is the name given to the freshly pressed grape juice containing the grapes’ skins, stems and stems. Must is the first step in winemaking after the grapes have been harvested from the vine.
isinglass
A substance obtained from the dried swim bladders of fish. Used by old-school winemakers to clear wine. There are many more modern alternatives now available
Jeroboam
A 3 litre bottle or 4 standard bottles. Most wine bottle sizes are named after biblical kings and Jeroboam was an administrator under King Solomon and succeeded his son, Rehoboam, on the throne of Israel.
Magnum
A 1.5 litre wine bottle (2 standard bottles). Great for cellaring and parties.
Melchizedek
A 30 litre bottle or 40 standard bottles. Most bottle sizes are named after biblical kings and Melchizedek was the king of Salem and priest of El Elyon mentioned in the 14th chapter of the Book of Genesis. He brings out bread and wine and then blesses Abram and El Elyon.
mesoclimate
The climate at an intermediate geographic scale, such as a town, district, neighbourhood or vineyard.  It is influenced by the physical characteristics of the area, e.g. terrain features such as hills, vegetation cover, water bodies, air movement, and cloud cover.
